Favourite Overnight Oats Recipes 1 (Cassie Johnston inspired)

Hello everyone! Welcome to a tasty overnight oats post! This is just a simple list of a couple of my personal favourite recipes and ones that I use on almost a daily basis when the weather gets colder like it is now. I don’t always have them warm, but I prefer a fuller breakfast in the colder weather, whereas in the Summer, I prefer light easy breakfast recipes.

Personally, I put my overnight oats in a jar, just because I find it easier to sort out the ingredients and everything that way. But they can also be put in a bowl or anything else that you have.

The basics for overnight oats are oats, milk or almond milk, yoghurt and whatever toppings you want to use. Personally I don’t use almond milk, the only reason being my partner has a nut allergy. Most all of these recipes I will show can be replaced with almond milk for a bit more flavour, so just bear that in mind!

It is easy to make any basic overnight oat recipes gluten free by adding gluten free oats, or vegan by swapping out the yoghurt, milk etc for more plant-based alternatives.

 

Classic Overnight Oats (Cassie Johnston)

Ingredients

  • 1/3 cup plain Greek yoghurt
  •  1/2 cup rolled oats
  • 2/3 cup milk of choice
  • 1 tablespoon chia seeds (to preference)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 0-2 tablespoons honey or maple syrup

This will give you a basic ‘starter’ recipe for overnight oats. Ideally, you want to leave this at least 4 hours, but overnight is preferable. From this, you can add whatever fruit and toppings you want, making it a really simple breakfast to make in the morning.

 

Carrot Cake Oats (Cassie Johnston)

A really simple way to have a tasty dessert for breakfast! It’s also a sneaky way to get some tasty nutrition in there too and start your day the right way.

Ingredients

  • 1/3 cup plain Greek yoghurt
  • 1/2 cup rolled oats
  • 2/3 cup milk of choice
  • 1 tablespoon chia seeds (to preference)
  • Pinch of salt
  • 0 – 2 tablespoons honey or maple syrup
  • 1 large carrot, peeled and shredded
  • 2 tablespoons softened cream cheese
  • 1/4 cup raisins
  • 1/2 teaspoon ground cinnamon

In the morning, you can add extra seeds, carrot or raisins on the top for an extra tasty topping.

 

Chocolate Coconut Oats (Cassie Johnston)

This one is absolutely gorgeous! One of my favourite chocolate bars is Bounty, so I first tried this for that reason!

Ingredients

  • 1/3 cup plain Greek yoghurt
  • 1/2 cup rolled oats
  • 2/3 cup coconut mik
  • 1 tablespoon chia seeds (to preference)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 0-2 tablespoons honey or maple syrup
  • 2 tablespoons cocoa powder
  • 1/4 cup flaked coconut

 

Strawberry Cheesecake Oats (Cassie Johnston)

Ingredients

  • 1/3 cup plain Greek yoghurt
  • 1/2 cup rolled oats
  • 2/3 cup milk of choice
  • 1 tablespoon chia seeds (to preference)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 0-2 tablespoons honey or maple syrup
  • 1/4 cup chopped strawberries
  • 3 tablespoons softened cream cheese
  • Zest and juice of 1/2 lemon

Chop up some extra strawberries to add on the top in the morning. I also like to add some extra fruits like raspberries to get some extra fruit in 🙂

 

Banana Chocolate Chip Oats

This is my naughty one, I absolutely love this and it’s one of my go to favourites.

Ingredients

  • 1/3 cup Greek yoghurt
  • 1/2 cup rolled oats
  • 2/3 cup milk of choice
  • 1 tablespoon chia seeds (to preference)
  • Pinch of salt
  • 0-2 tablespoons honey or maple syrup
  • 1/2 ripe banana, chopped or mashed
  • 2 tablespoons chocolate chips

My tip: I like to mash the banana to get the flavour through, but I also chop it in to chunks to have some throughout the oats. I then add more chocolate chips and banana to the top in the morning.
